About Dhaba by Claridges
Dhaba by Claridges creates and serves classics in a different manner, never stepping beyond the culinary limits of a Dhaba – the soul of its existence. The menu, crafted especially by Chef Ravi Saxena, is divided into three parts – tawa, tandoor and patila which are the mainstays of a typical Dhaba cooking style. Chef Ravi feels freshly cooked food and use of fresh masalas epitomize Dhaba food and that is what he replicates in his own kitchen. There are no modern-day quick fixes like addition of cream, and the food is very simple.
Each Dhaba is designed to take you through an ode to the Indian highways that have always served as fantastic food memories. The creative chaos of colours, traffic signal lights, vintage Bollywood posters add to a unique highway dining experience. A trucker’s life centres around dhabas dotting the Indian National Highways as he makes pit stops to eat, rest, wash, and braces himself for onward journey. Taking inspiration from the trucker and his journey across the dhabas of the country’s longest national highway, NH-44 which extends from Srinagar to Kanyakumari, Dhaba by Claridges kicks in nostalgia by presenting a kitsch and casual space with moderate pricing and choicest food. The signatures served at Dhaba by Claridges include Butter chicken, Baingan Bharta, Dal Dhaba, Yellow Dal Tadka, Highway Chicken Tikka, Balti Meat, Tandoori Mutton Chaap and Makai PyazSeekh.
