#3 Recipe – Pesto Chicken
4 boneless, skinless chicken breast halves
Pepper powder
¼ cup of Parmesan cheese
4 tablespoons olives
For pesto sauce:
15-20 basil leaves
5 tablespoons peanuts
6-7 garlic pods
4 tablespoon olive oil

Pound the chicken breasts to an even thickness and season with salt and pepper on both sides.
In a separate bowl, mix together the pesto sauce and Parmesan cheese.
Spread the pesto mixture evenly over the chicken breasts.
Place the chicken breasts in a microwave-safe dish.
Cover with a single layer of thick paper towel and microwave on high for 7 minutes or until the chicken is fully cooked.
Let the chicken rest for a few minutes before slicing and serving. Enjoy!
How to make the pesto sauce:
Start by toasting the peanuts in the microwave over medium heat until they are lightly browned and fragrant. Be sure to keep an eye on them and stir frequently to avoid burning.
Next, combine the basil, Parmesan cheese, garlic, salt, and pepper in a blender. Pulse a few times to chop the ingredients together.
Slowly drizzle in the olive oil in the blender until the mixture is well combined and has a smooth consistency. Stop to scrape down the sides of the container as needed.
Add the toasted peanuts to the mixture and pulse a few more times until the nuts are incorporated and the sauce has a slightly chunky texture.
Taste and adjust the seasoning as needed with more salt, pepper, or cheese. If the sauce is too thick, you can add more olive oil to thin it out.
