Traditional yet Healthy Recipes to celebrate your Good Friday and Easter Weekend

The Good Friday weekend is a time to indulge in delicious foods with family and friends. From hot cross buns to Easter eggs and roast dinners, there are plenty of treats to enjoy. However, while it is important to enjoy the festivities, it is also crucial to focus on our health. With the abundance of sugary and high-calorie foods on offer, it is essential to maintain a balanced diet and take care of our body. Since Good Friday and World Health Day is coinciding on the same day, Voltas Beko brings you a range of traditional yet healthy dishes to ensure you enjoy the holiday season without compromising on your health!

 

Recipe 1 – Broccoli Steaks with Spiced Tomato Jam

Ingredients:
For the Broccoli Steaks:
2 large broccoli heads, trimmed and sliced into 1-inch thick steaks
2 tbsp olive oil
Salt and pepper, to taste
For the Spiced Tomato Jam:
400g diced tomatoes
2 tbsp tomato paste
1/4 cup honey
1 tsp ground cumin
1 tsp smoked paprika
1/4 tsp ground cinnamon
Salt and pepper, to taste

 

Steps:
For the Broccoli Steaks:
Place the broccoli steaks on a microwave-safe plate. Brush them with olive oil and season them with salt and pepper.
Cover the plate with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
Microwave the broccoli steaks on high for about 4-5 minutes or until they are tender but slightly firm. The digital display in the Voltas Beko microwave will help you keep an eye on the food while you are decorating your home!
For the Spiced Tomato Jam:
In a microwave-safe bowl, combine the diced tomatoes, tomato paste, honey, cumin, smoked paprika, and cinnamon. Season with salt and pepper.
Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
Microwave the tomato mixture on high for about 6-8 minutes or until the tomatoes have softened and the mixture has thickened.
Remove from the microwave and let it cool.

To serve:
Arrange the broccoli steaks on a serving plate.
Spoon the spiced tomato jam on top of the broccoli steaks.
Serve immediately and enjoy!
Note: You can also garnish with chopped fresh herbs, such as parsley or cilantro, if desired.

 

Recipe 2 – Vegetarian Lasagne

Ingredients:
9 lasagne sheets
1 onion, chopped
3 cloves garlic, minced
2 cups of chopped mixed vegetables (such as zucchini, eggplant, bell peppers, carrots, mushrooms, etc.)
2 cups of canned crushed tomatoes
1 tbsp olive oil
1/2 cup fresh basil leaves, chopped
1 cup low-fat cottage cheese
1 cup part-skim mozzarella cheese, shredded
Salt and pepper, to taste

 

Steps:
In a microwave-safe dish, add the chopped onion, minced garlic, and chopped mixed vegetables. Drizzle with olive oil and season with salt and pepper. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
Microwave on high for 5-7 minutes or until the vegetables are tender.
Add the canned crushed tomatoes to the vegetable mixture and microwave on high for an additional 2-3 minutes.
Remove from the microwave and stir in the chopped fresh basil leaves. Set aside.
In another microwave-safe dish, add a layer of lasagne sheets. Spread a layer of the vegetable-tomato mixture over the lasagne sheets. Top with a layer of cottage cheese and shredded mozzarella cheese. Repeat the layering process until all the ingredients are used up, making sure to end with a layer of cheese on top.
Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.
Microwave on high for 10-12 minutes or until the cheese is melted and the lasagne is heated through.
Remove from the microwave and let it rest for a few minutes before serving.
Enjoy your healthy vegetarian lasagne! You can also customize this recipe by adding your favourite vegetables or using different types of cheese.

 

Recipe 3- Fruit Easter Eggs

Ingredients:
Assorted fruits (such as watermelon, apple, banana, pineapple, strawberries, etc.)
Easter egg moulds (plastic or silicone)
Wooden skewers or toothpicks

 

Steps:
Cut the fruits into small pieces and set aside.
Wash and dry the Easter egg moulds.
Fill each mould with the fruit pieces, making sure to pack them in tightly.
Place a wooden skewer or toothpick in each mould, leaving about 1 inch sticking out of the top.
Cover the moulds with plastic wrap or aluminium foil.
Microwave the moulds on high for about 1-2 minutes or until the fruits are slightly softened and have released some juice. Be careful not to overcook the fruits.
Remove the moulds from the microwave and let them cool for a few minutes.
Remove the plastic wrap or aluminium foil and carefully remove the fruit Easter eggs from the moulds.
Place the fruit Easter eggs in a container and refrigerate them in your Voltas Beko refrigerator with NeoFrost™ Dual Cooling technology for at least 1 hour or until they are firm. This will ensure that your Easter eggs has its natural goodness intact.
Once firm, remove the skewers or toothpicks and serve the fruit Easter eggs chilled.
