Summer is incomplete without is a quick and easy mango mousse that you can whip in less than 30 minutes.

2 large mangoes  
1 tbsp lemon juice½ cup icing sugar1 tbsp gelatin¼ cup hot water300 ml heavy cream MethodPeel and chop mangoesBlend it with lemon juice and icing sugarPour into a glass bowlDissolve gelatine in hot waterAdd it to the mango mixtureFold in the whipped creamWhisk wellChill till it is setYou can also place it in individual servings. And garnish with mint leaves.
