At its core, the collaboration brings together two distinct culinary voices, where deeply rooted heritage meets contemporary interpretation. Designed as a high intent, two day only experience, the takeover moves beyond conventional dining formats to present something structured, immersive, and entirely non replicable.
Chef Priyam Chatterjee, widely regarded as one of India’s most pioneering chefs, brings an instinctive and artistic approach to modern Indian cuisine, shaped by his deep understanding of classical technique and global exposure. His cuisine reflects a seamless interplay between tradition and refinement, where familiar flavours are elevated through precision and restraint.
Joining him is Chef Rishabh Seal, whose cooking is anchored in cultural memory and quiet innovation. Known for his nuanced approach and thoughtful layering of flavours, his food draws from regional influences while embracing a contemporary lens, resulting in dishes that are both intimate and expressive.
Together, the chefs present a bespoke menu centred around the idea of “From Heritage to Haute Cuisine Reimagined”, where traditional narratives are reinterpreted with modern technique and elevated sensibility.
