With the spirit of Navratri filling the air, kitchens across India turn to saatvik traditions that celebrate purity, balance, and nourishment. Joining this festive rhythm, Mazzo at Marriott Executive Apartments Hyderabad presents an all-vegetarian Navratri menu featuring over 40 fasting-friendly dishes. Crafted by Chef de Cuisine Suresh Rajan Pillai, this culinary journey reimagines vrat cuisine with a contemporary flair, transforming age-old recipes into an indulgent celebration.
The spread begins with fasting favorites such as sabudana vada, arbi galouti, lotus stem chips, rajgira tikki, and falahari dahi kebabs. Live counters add an interactive touch, from a South Indian tiffin station serving mini dosas and kuzhi paniyaram to a Gujarati farsan counter featuring handvo, khandvi, and patra—all prepared without onion or garlic.
Daily rotating mains highlight vrat-style specialties including Dum Aloo Vrat Wale, Aloo Tamatar Rasedar, and Aloo Singhare ki Sabzi, paired with paneer delicacies. A curated rasam collection—featuring drumstick, Mysore, pepper-curry leaf, and tamarind varieties—brings warmth, while the signature Navratri saatvik biryani anchors the grain selection alongside lemon, tamarind, coconut, and peas pulao.
Wholesome salads like cucumber-peanut, carrot-coconut, and papaya-pomegranate sit alongside a vibrant raita bar. To end on a sweet note, the dessert counter features hot Indian classics such as sabudana kheer, lapsi, and pazham pradhaman, complemented by puddings and an ice cream counter with traditional toppings.
“This menu is a journey into India’s ancient culinary wisdom,” shares Chef Suresh Rajan Pillai. “We’ve honoured the purity of vrat cooking while enhancing flavours with modern techniques, drawing on ingredients and traditions from 15 regional cuisines to create an authentic yet elevated Navratri experience.”
