Sri Lankan cuisine is a beautiful balancing act: creamy coconut softening the heat of chilli, curry leaves lending their earthy aroma, jaggery adding quiet sweetness, and spices layered with restraint yet confidence. It’s food that’s rustic, generous, and deeply emotional.
Anchoring this experience is Priya Bala, one of India’s most respected food voices. A journalist, restaurant critic for over a decade, and author of Start Up Your Restaurant,Secret Sauce and Bazaar Bites, Priya brings authenticity to the table cooking and curating dishes that feel lived-in and loved, rather than merely plated.
The journey begins with irresistible small plates: crisp Banana Flower Cutlets, fiery Bittergourd Sambol, Seeni Sambol Buns stuffed with sweet caramelised onions, and golden Mushroom Patties reminiscent of Sri Lankan street snacks. The mains lean into comfort and nostalgia. Fragrant Cheese Kotthu and soulful Idiappam Kotthu are rich with texture and warmth, while pandan-scented Yellow Rice paired with Chicken Curry and sweet-sour Curried Pineapple showcase the cuisine’s signature harmony of flavours.
Dessert is where Sri Lanka truly lingers. Silky Watalappam custardy and fragrant with jaggery and spice and the iconic Love Cake bring the meal to a slow, indulgent close.
