Savya Rasa Presents ‘Ushnakala’ — A Summer Menu Rooted in South India’s Timeless Culinary Wisdom

As the intensity of South India’s summer sets in, Savya Rasa invites guests to experience Ushnakala—a specially curated Summer Food Festival that pays homage to the South India’s age-old culinary traditions designed to nourish, cool, and sustain through the harshest of seasons from April 15th onwards at Chennai and Pune.

 

More than just a seasonal showcase, Ushnakala is a celebration of how South Indian kitchens have, for centuries, responded to the climate with ingenuity and intuition. It brings together a repertoire of dishes that are deeply rooted in local culture, crafted with purpose, and aligned with the rhythms of nature.

 

At the heart of the festival are traditional, cooling preparations such as pazhaya sooru, ragi koozh, and kambu koozh—fermented porridges brewed overnight in clay pots, known for their restorative and heat-balancing properties. These dishes exemplify the wisdom of fermentation and the importance of gut-friendly, seasonal eating.

 

Hearty offerings like ragi sangati paired with a robust nattukodi pulusu bring depth and character to the festival, highlighting slow-cooked flavours and the enduring legacy of rural South Indian cuisine.The festival also celebrates the beloved mango in its many forms—raw, ripe, slow-cooked, and delicately crafted into desserts. Signature dishes include manga malli sadham, the comforting mambazha puliserry, and a refined mango pudding that captures the fruit’s natural sweetness and versatility.
