An immersive evening of food, history, and storytelling traced the distinct summer landscapes of undivided Panjab

Ikk Panjab hosted The Provenance Dinner: Panjab in Summer, a one-of-a-kind curated dining experience that brought together culinary heritage, seasonal storytelling, and regional memory in an evocative exploration of undivided Panjab’s diverse gastronomic landscape.

Designed as an immersive multi-course experience, the dinner traced a journey through the regions of Majha, Potohar, Doaba, and Malwa, presenting Panjab not as a singular cuisine, but as a richly layered cultural geography shaped by land, climate, movement, and memory.

Conceptualised around the theme of summer, the menu interpreted the season through thoughtfully curated vegetarian and non-vegetarian courses that reflected the distinct produce, preservation practices, cooking methods, and restorative food traditions unique to each region. From the cooling fruit-forward expressions of Majha and the elemental fire-roasted traditions of Potohar to the pastoral abundance of Doaba and the soothing, balanced flavours of Malwa, each course offered guests a sensory passage through Panjab’s culinary history.

The experience was elevated by a bespoke cocktail programme crafted in partnership with Godawan, featuring signature serves including Green Mango Drill, Bitter Bloom, Basant Bazaar Collins, Mulberry Watch, and Lychee Lawn each designed to mirror the flavour profiles and emotional cadence of the courses they accompanied.

The evening was led by Dr. Kurush Dalal, whose insights into food archaeology and culinary history provided historical context to the menu, alongside Vernika Awal, who guided guests through the narrative and conceptual framework of the dinner.
