  1. Hibiscus Paloma (Spring)

A floral, citrus-forward highball

Glass: Highball

Ingredients

  • 60 ml local tequila 
  • 20 ml hibiscus-infused simple syrup 
  • 60 ml Coconut water 
  • Sparkling water or soda (to top) 

Method

  1. Fill a highball glass with ice. 
  2. Pour in hibiscus syrup and tequila. 
  3. Add coconut water and stir gently to combine. 
  4. Top with sparkling water or soda. 
  1. Sattu Old Fashioned (Summer)

A nutty, earthy twist on a classic Old Fashioned

Glass: Whiskey glass

Ingredients

  • 60 ml bourbon or whiskey infused with sattu.
  • 5g jaggery 
  • A few dashes khaini bitters  

Method

  1. Add whiskey (or sattu-infused whiskey), jaggery syrup, and bitters into a mixing glass with ice. 
  2. Stir well until chilled and slightly diluted. 
  3. Strain into a rocks glass over a large ice cube. 
  1. Golden Mango Grain (Autumn)

A tropical, creamy, clarified-style spirit-forward drink

Glass: Coupe

Ingredients

  • 60 ml rum infused with puffed rice 
  • 10 ml pineapple juice 
  • 30 ml mango purée 

Method

  1. Combine rum, pineapple juice, and mango purée in a shaker with ice. 
  2. Strain and clarify using clarification method. 
  3. Serve in a coupe glass. 
  4. Garnish with a fresh mango slice.
