‘Time To Sea’ Opens in Mumbai, Celebrating India’s Coastal Heritage

Mumbai’s new restaurant in Oshiwara celebrates coastal flavours from Tamil Nadu to the Konkan.

Time To Sea, a new dining destination in Oshiwara, Andheri (West), welcomes guests to explore the culinary traditions of India’s coastal belt under the culinary direction of consulting chef Sebastian G. Fernandes, conceptualized by Mumbai-based restaurateurs Ahsan Shaikh and Shakil Bhure.

The menu journeys from the spice-forward kitchens of Tamil Nadu and Andhra Pradesh through Kerala’s coconut-rich cuisine, pauses at the fiery flavours of Mangalore, and sails past Goa to the sun-warmed shores of Malvan and the Konkan.

Highlights include Andhra Paneer Naga Chilli, flame-grilled Tiger Prawns with artisanal butter sauces inspired by Goan-Portuguese grills, along with Malvani curries, Mangalorean sukka, and Kerala-style seafood that balance nostalgia with newness.

Guided by the belief that “food is emotion,” the space is designed to feel warm and welcoming, echoing easy coastal living. The kitchen honours time-tested recipes prepared with fresh local produce and regional spices. Located in Oshiwara, the intimate 675-square-foot restaurant layers natural wood, rattan, and breezy accents around an open kitchen and relaxed dining nooks.

Chef Sebastian G. Fernandes, a Mumbai-based culinary consultant with over four decades of experience across India and international markets, leads menu creation and kitchen training at Time To Sea.

“In every coastal kitchen, technique is tradition and freshness is faith. At Time To Sea, we source like fishermen, cook like grandmothers, and plate like craftsmen — so each dish carries the tide from shore to table,” says Chef Sebastian G. Fernandes, Consulting Chef.

From the tang of a coastal curry that recalls monsoon memories to the crunch of a golden-fried catch that feels like a seaside holiday, Time To Sea invites Mumbaikars to gather, pull up a chair, and set sail on a journey of flavour.
