Healthy Spinach recipes by @vinsplate (World Spinach Day on 26th March)

Recipe 1 – Spinach soup by @vinsplate
When two most boring ‘super-foods’ meet to create a super delicious healthy meal. Yes it is my very own version of Oats and Spinach soup with a dash of clove and a hint of garlic.

I am strong to the Fin-ich

What do you need to make it💁‍♀️

* 1 tbsp of olive oil
* bunch of spinach
* 2 spoons Oats
* 2 to 3 cloves of Garlic chopped
* 2 green tomatoes chopped
* 2 cloves
* Salt and black pepper
* lime juice

Let’s make it🤷‍♀️

1.) Heat the olive oil in a pan. Add the cloves, garlic, oats, green tomatoes and sauté for 2 to 3 minutes.
2.) Add the blanched and chopped spinach. Sauté for a minute.
3.) Add 3 cups of water. Add salt and pepper. Give it a boil. Let the soup cool down. Once cool enough, blend it till it’s smooth. Add more water for the desired consistency.
4.) Serve it chilled or hot. Sprinkle little freshly crushed black pepper and squeeze of lime on top. Enjoy your soup 🥣


Recipe 2 – Spinach Barley 
Barley is inherently cooling, anti-inflammatory and a wonderful detoxifier for the liver
Barley is the complete summer cereal. It is nutritionally rich in phosphorus and also contains calcium and iron

•       1 cup cooked pearl barley
•       1 bunch of spinach
•       1/2 cup of boiled chick peas
•       1 onion chopped
•       2 cloves of garlic crushed
•       2 chillies  chopped finely
•       Salt and pepper to taste
•       1 tbsp oil
•       Lime juice to taste

1.) Heat the oil in a pan. Add the garlic, onion, chillies to the oil.
2.) Add the spinach, toss it till it’s wilted.
Add the chickpeas and the barley. Add the salt and the pepper. Add the lime juice to your taste.

✅ Have it as hot breakfast or like a cool salad.
✅ You can have it any meal
✅ Left over of this can be made into barley spinach kebabs by mixing little breadcrumbs.

Recipe 3 – Spinach dip
•       2 cups of hung curd
•       1 cup Blanched and drained spinach
•       2 cloves of garlic crushed
•       1 green chilli chopped
•       3 tbsp cheese grated (optional)
•       1 tbsp virgin olive oil
•       1/2 cup boiled chick pea
•       Salt to taste

1.) Mix all the ingredients together and keep the dip chilled.
2.) Serve it with chickpea khakhraas and grilled potatoes
