SAFFRON & DRY FRUIT MODAK
Ingredients
For the Rice Dough
- 1 cup rice flour
- 1¼ cups water
- 1 tsp ghee
- Pinch of salt
For the Filling
- 1 cup Tata Sampann Dry Fruits & Nuts Mix, finely chopped
- 4 Tata Sampann dates (Deseeded), finely chopped or pureed
- 2 tbsp grated jaggery
- 2 tbsp fresh grated coconut
- 2 tbsp Tata Sampann dried figs (anjeer), finely chopped
- 8-10 saffron strands, soaked in 1 tbsp warm milk or water
- ¼ tsp cardamom powder
- 1 tsp ghee
Method
Prepare the Filling
- Heat 1 tsp ghee in a pan.
- Add the Tata Sampann Dry Fruits & Nuts Mix and lightly roast for 2 minutes.
- Add chopped dates, dried figs, grated coconut and jaggery.
- Cook on low heat until the mixture comes together.
- Stir in saffron along with the soaking liquid and cardamom powder.
- Mix well and cook for another minute.
- Remove from heat and allow the filling to cool completely.
Prepare the Rice Dough
- Bring water, ghee and salt to a boil in a pan.
- Lower the flame and add rice flour gradually.
- Mix quickly until no dry flour remains.
- Cover and rest for 3-4 minutes.
- Transfer to a plate and knead while still warm to form a smooth, soft dough.
Shape the Modaks
- Grease your palms lightly with ghee.
- Divide the dough into 12-14 equal portions.
- Shape each portion into a small cup by gently pressing and thinning the edges.
- Place 1-2 teaspoons of filling in the center.
- Gather the edges into pleats and seal at the top to form a traditional modak shape.
Steam
- Arrange the modaks in a greased steamer.
- Steam for 10-12 minutes until the outer covering becomes glossy.
- Remove and allow them to rest for 2 minutes.
- Brush lightly with a little ghee and garnish with a few saffron strands.
