Learn How to Make Cocktail High Tea Petit Fours with Chef Sanjana Patel


The festive season is in full swing, and this means that it’s time to start brushing up on all your cooking skills, in preparation for the soirees you will host all season long. Sign up for Chef Sanjana Patel (of La Folie)’s Cocktail High Tea Petit Fours class and ace the recipes for the finger foods you will need to serve at your next elegant event.

During this interactive class with Chef Sanjana Patel, participants will learn how to create delicious, bite-sized high tea snacks, both savoury and sweet. These will include tartlets with sweet and savoury fillings such as stone fruits and petit garden-fresh organic vegetables; bite-size tea cakes including financiers, Swiss roll, madeleine tea cakes and gluten-free, healthy options; healthy desserts served in verrines (small glasses); and miniature garnishes that can be used to decorate desserts and snacks. There will be ample options for vegetarians during this class, and tips will be provided for various substitutes for ingredients. The recipes are subject to change.

Guests will learn how to make low sugar, pectin-based gels, buttercream, mousse, ganache and glazing; will explore exciting flavor combinations; and be exposed to new and innovative products that are healthy and vegetarian-friendly. The techniques shared will be applicable for both home and commercial use.

A selection of the creations made in the class can be taken home to enjoy with family and friends.

The class will begin at 10:00 am on Monday, September 15, 2019 and will last for the entire day, until 5:00 p.m. A light lunch and refreshments will be provided, through the day.
