Veg rolls are one of the kids’ favourite snacks. This is an excellent way to include more vegetables and protein options in your kid’s diet. Who said that quick meals have to be unhealthy? You can include, proteins like chickpeas, paneer, sprouts or any kind of beans or pulses. You can add salsa for a Mexican flavour, garam masala and chaat masala for an Indian flavour, add schezwan or Chinese sauces for a Chinese flavour, and there’s always our beloved cheese to make everything more delicious. Kathi roll base:

Preparing the base for the Kathi roll takes time. When you have the base ready then assembling the roll hardly takes any time. You can also buy readymade tortillas or Kathi roll base from supermarkets when you are in a pinch.

Ingredients:

2 cups whole wheat flour
½ teaspoon salt or add as required
1 tablespoon oil
1 cup water or add as required
oil or ghee for roasting Rotis

Method:

In a mixing bowl, take 2 cups of whole wheat flour, 1 tablespoon of oil and ½ teaspoon of salt
Slowly add 1 cup of water while mixing the flour.
Begin to knead. Add water as required and knead to a smooth soft dough.
Cover the dough and keep it aside for it to rest for 30 minutes.
After 30 minutes, divide the dough into portions and make dough balls.
Dust the dough ball with some flour. Then gently roll it into a thin roti.
Place the roti on a hot tawa. Cook, till you see bubbles appearing on the rot.
Cook on a medium-high to high flame. Then flip the roti.
Spread some oil all over.
Then flip again when the second side is cooked.
Spread some oil on this side too. Flip the roti for even roasting.
Remove and keep the roti aside. Keep the rotis covered so they do not become dry. Prepare all rotis this way.

Ingredients:
For the paneer tikka filling:

1 cup paneer cubes
1/2 cup tomatoes
1/2 cup capsicum
1/4 cup onions
Oil

For the marinade:

1/4 cup curd
1 tsp Kashmiri red chilli powder
1/2 tsp ginger garlic paste
1/4 tsp besan flour
1/2 tsp chaat masala
1/2 tsp Kasuri methi
3/4 tsp garam masala
Salt

For the Kathi roll:

Lettuce
Onion slices
Rotis

Method:

In a mixing bowl, mix all the ingredients for the marinade
Now add the paneer cubes, tomato cubes, capsicum cubes and onion cubes into the marinade and mix well
Marinate it for 20 mins
In a pan, add oil
Once the oil is hot, add the marinated mixture and cook it for 5 mins
To assemble the Paneer Tikka roll, place some lettuce leaves on the roti, place the cooked paneer tikka filling and top it off with onion slices and roll the roti.

2. Chatpata Rajma Roll

For the rajma filling:

1 cup boiled rajma
1 small onion chopped
2 tomatoes chopped
1 tsp ginger garlic paste
2 tsp Kashmiri red chilli powder
2 tsp coriander powder
Coriander leaves
Salt
Oil

For the Kathi roll:

Lettuce
Onion slices
Mint chutney
Chaat masala
Rotis

Method:

In a pan, heat some oil
Add onions and ginger garlic paste and saute for 3-4 minutes
Once the cooked has turned golden brown, add the tomatoes and all the spice powders and salt
Cook the tomatoes till they are soft
Now add the boiled rajma beans and mash them gently
Mix everything well
Add the chopped coriander leaves and turn off the stove
To assemble the rajma roll, place some lettuce leaves on the roti, place the cooked rajma filling and top it off with onion slices, mint chutney and chaat masala and roll the roti.

1 cup boiled and mashed potatoes
1 small onion chopped
2 green chillies chopped
1 tsp garam masala
Coriander leaves
Salt

For the Kathi roll:

Onion slices
Cheese spread or cheese slice
Mint chutney
Chaat masala
Rotis

Method:

In a mixing bowl, add boiled and mashed potatoes, onions, green chillies, garam masala powder, coriander leaves and salt
Mix everything well
Divide the potato mixture into equal parts and shape them into long cylindrical shapes
To assemble the cheesy potato roll, spread the cheese spread (if you don’t have cheese spread you can add a cheese slice or grated cheese in the next step) and mint chutney on the roti

2 green chillies chopped
1 tsp garam masala
1 tsp chaat masala
1/2 cup bread crumbs
Coriander leaves
Salt

Tandoori mayonnaise
Mint chutney
Lemon juice
Chaat masala
Rotis

Method:

In a mixing bowl, add all the ingredients for the hara bhara tikki
Mash the chana dal and peas slightly
Mix everything well and make a dough
Divide the mixture into equal parts and shape them into round patties
Heat a pan with some oil
Fry the patties till they are evenly roasted on both sides and golden brown in colour
To assemble the hara bhara roll, spread the tandoori mayonnaise spread on the roti
