Method

Once the chocolate is melted, let it cool down to room temperature

Whip the whipping cream till you get stiff peaks. Tip: Make sure to refrigerate the cream and the bowl in which you are going to whip the cream. This will get you stiff peaks quicker. Do not let the cream turn warm when you beat it. Also do not overbeat the cream as it will curdle.

Now gently fold the cooled chocolate mixture, vanilla extract and brewed coffee into the whipped cream. Add the chocolate in batches to get an even texture.

Divide the chocolate mousse mixture into serving glasses or cups and refrigerate them for about 2 hours

Butter 120 gms

Method

Melt chocolate and butter in a double boiler

In a mixing bowl, sieve the flour

In a different bowl beat eggs and sugar till they are well combined and pale

Add the melted chocolate into the egg mixture

Add the sieved flour and salt and fold everything till they are well incorporated

Preheat the oven to 450C

Butter the small ramekins or a medium-sized ramekin and dust them with flour and tap out the excess flour

Add the choco lava cake (molten chocolate cake) batter into the ramekins

Bake for 12 mins or until the cake’s sides are cooked well but the centre is still fudgy

Cool the choco lava cake for 1 minute and serve the decadent choco lava cakes immediately

You can also serve the choco lava cakes with vanilla ice cream on top
